“Pee” is not lobster’s urine, but lobster’s blood. In other words, the essence of urinating is to bleed the lobster.

Why should it be said to be “urinating” when it is clearly bleeding? Careful observation shows that a hole that can be opened and closed can be seen at the upper end of the lobster’s tail section, that is, near the tail of the lobster facing the lower abdomen. In fact, it is the lobster’s anus.

Lobster bleeding is processed from the anus of lobster, and finally the blood will flow out of the anus, just like lobster urinating. Therefore, the catering industry calls it “urinating” for lobster.

Let’s start with how to bleed the lobster

Bleeding does not have to start with the lobster’s anus, but can also be cut off from the mouth or even the whole head. However, at present, anal treatment is the easiest and most mainstream practice. The operation only needs one chopstick. Insert the chopsticks directly into the lobster’s body and poke it all the way to the position of the lobster’s head.

After rubbing back and forth for a few times, take out the chopsticks, and then press the lobster head slightly towards the tail to ensure that the shrimp is vertical. You can see that the lobster’s blood is discharged from the anus like peeing.

Lobster’s blood is transparent and colorless when it just flows out of the anal door, but when it flows into the plate, it changes from colorless and transparent to light blue or blue black.

Human blood is red because of hemoglobin, but lobster has no hemoglobin and is replaced by hemocyanin. Hemocyanin, also known as hemocyanin, hemocyanin and ceruloplasmin, is rich in copper ions. When it flows out of the body and comes into contact with the air, the copper ions combine with the oxygen in the air and oxidize to form the oxide of copper ions.

Therefore, after the lobster’s blood flows out of the body, it will change from colorless and transparent to light blue, blue black, or even black. This oxidation process will also convert lobster blood from liquid to solid like jelly.

Do lobsters have to bleed?

The best way to cook lobster is to bleed. Blood is one of the sources of fishy smell of most seafood. Bloodletting can effectively remove the fishy smell. Of course, this does not mean that lobsters without bleeding cannot be eaten. In Taiwan and Fujian, lobster blood is even specially made into lobster blood porridge. Fishy and fresh are sometimes difficult to completely separate. People in Taiwan even drink lobster blood and only add some sorghum wine or rice wine to remove fishy.
